There’s good reason, because baking is a complex science and once you start fiddling with the ingredients, you start messing up the chemistry. But I want people to explore and try new things. So you’ll find that each recipe in this book has a core recipe and also an alternative recipe or two. Some are fairly easy alternatives, such as a simple swap of fruit. But others are a little more extensive. Read the main recipe completely before you read the alternatives; it will have more detailed instructions.
